Focusing on Purim’s signature treat – Hamantaschen, this workshop suggests an innovative interpretation to the familiar holiday cookie as a savory appetizer. In this learning experience, participants will learn how to make savory Hamantaschen using puff pastry and fillings of three different flavors. One classic filling of tomato, mozzarella & basil and two other Israeli influenced fillings of Israeli feta cheese, olives, & za’atar, and eggplant, potato & sumac filling. While preparing the fillings, participants will learn about Israeli popular ingredients and Israeli flavors as well as the details to successfully using puff pastry and other kitchen skills such as chiffonade slicing technique. Also, participants will be introduced to Israeli tehina and will learn how to prepare homemade tehina sauce.
